Parsi Pora, Omelette Parsi Food Style.

Parsi Pora Pao is legendary.

It is said that in simplicity there is perfection. The legendary Parsi Pora Pao is the epitome of a simply perfect fare. Perfect for the family picnic, a daily school lunch box, a sunday brunch for the family or a last minute midweek meal. Healthy and nutritional most of us grew up having this vegetarian omelette as a  perfect "go to"meal.  Generally served between two slices of crusty bread (called brun pao, a crusty round bread with a soft center ), liberally smothered with strawberry jam, (and at times slathered with butter) it is a hearty meal in itself. A cup of hot Parsi Choi  served with this balances the perfect equation. 

If the omelette is covered to cook and not flipped this is the top side

If  it is flipped, this is the bottom side cooked to a golden brown

Makes 4 large omelettes

Finely chop; in dice

1 cup onion

1 cup fresh tomato
12 green chillies
1 cup fresh corriander leaves

Beat together

12  large eggs at room temperature

1/2 tsp salt

Mix in the  prepared vegetables into the beaten eggs.

Heat a skillet  that is about 27cm/ 9 inches

Add 1 tsp of oil
when hot
Pour 1/4 of the mixture. Leave for a minute and cover. Let it cook for 2 minutes and flip into a plate; Ensure the egg is cooked from the top.


Flipping or folding are both good options.

Add more green chillies if you like the spicy flavour.

Many families love to eat their omelette with fresh rotli.

If you have a large family and want to eat together, use a large skillet which is about 38cm/15 inches make one large omelette by heating the pan to very hot on a high heat, adding a tad of oil, pour all of the mixture, cover, reduce heat to medium low and cook for 6 minutes. Cut into wedges and serve immediately. You will not need to turn it but always serve it flip side up for the caramlised side to show beautifully!

Simply omelette and fresh rotlis

Omelette and brun pao, a dollop of jam and some parsi choi to wash it all down.
