Granola and Beet Salad

For 2 persons
1/2 cup granola
1/2 cup mixed lettuce leaves
6 slices of beetroot
1 tbsp balsamic vinaigrette
2 discs of goat cheese
salt, pepper, sumac
Sprinkle the granola at the base of the plate. Place the lettuce leaves, topped with the golden beetroots and the goat cheese on top. Sprinkle with freshly cracked mixed peppercorns and a pinch of sumac. Drizzle with the vinaigrette and serve.
Tips
For an extra touch, you can caramelise the top of your goat cheese using a blowtorch.
Add some dried fruit of your choice to your granola, like cranberry, fig, or barberry (Zereshk).
You can choose to use a fruity balsamic vinaigrette, like a fig or raspberry flavour.
To make the vinaigrette, use equal parts of olive oil and balsamic vinegar, add a sprinkle of salt, pepper and sugar, and shake well.
To make your own granola, mix a cup of oats, 1/4 cup of almond slivers and 1/4 cup of dried cranberries with a tsp each of honey, maple syrup and oil – sesame, coconut, avocado or olive oil.
Bake this on a flat tray that has been lined with parchment paper, in a preheated oven of 325°F / 165°C for 18 minutes, toss with a fork, and cook for another 5 minutes. Cool and store in an airtight container.
You may add walnuts and cashews, flax and chia seeds, and a touch of cinnamon powder if you want to.
